In a small bowl, whisk together mayonnaise, ketchup, mustard, sweet relish, vinegar, garlic powder, and smoked paprika until well blended. Refrigerate while preparing the other components.

Bake or air fry the frozen crinkle cut fries according to package instructions until crispy and golden. Keep warm in the oven.

If using ground beef, divide into four equal portions and shape into patties slightly larger than the tortillas. Season both sides with salt and pepper.

Heat a griddle or large skillet over medium-high heat. Add butter and chopped onions; sauté until softened. Add patties and smash with a spatula. Spread mustard on top of each and sprinkle with hamburger seasoning.

Flip the patties once the bottom is browned and crusted. Cook until internal temperature reaches 160°F. Remove and chop into bite-sized pieces.

Lay tortillas flat and spread a spoonful of sauce down the center. Layer fries, one slice of cheese, chopped burger, grilled onions, another slice of cheese, and more sauce.

Fold sides of the tortilla inward and roll tightly. Place seam-side down on a hot griddle or skillet. Cook until golden and crisp on both sides.
