01 - 1 lb beef sirloin or flank steak, cut into bite-sized strips

02 - 1 small onion, thinly sliced

05 - 1 tbsp olive oil
06 - 1 tbsp Cajun seasoning
07 - 1 tsp smoked paprika

08 - 1 cup stone-ground grits
09 - 4 cups chicken broth
10 - 1 tbsp unsalted butter
11 - 1 cup shredded sharp cheddar cheese (optional)

# Steps to Cook:

01 - Bring 4 cups of chicken broth to a boil in a medium saucepan. Gradually whisk in the grits and cook over low heat, stirring occasionally, for 20-25 minutes until thick and creamy. Stir in butter and shredded cheddar cheese if using. Keep warm.
