02 - 1 small yellow onion, diced (about 1 cup)
03 - 6 large eggs, beaten
04 - 1 teaspoon salt
05 - 1 teaspoon freshly ground black pepper
06 - 6 slices bacon, cooked and crumbled
07 - 2 cups sharp cheddar cheese, shredded and divided

→ Pastry Base

08 - 1 can (8 count) Pillsbury Grand biscuits
09 - Non-stick cooking spray

→ Seasoned Butter Topping

10 - 1/4 cup butter, melted
11 - 1/2 teaspoon onion powder
12 - 1 teaspoon fresh parsley, chopped

# Steps to Cook:

01 - Heat vegetable oil in a medium skillet over medium heat. Add diced onions and cook for 5 minutes until soft and translucent.
02 - Add beaten eggs to onions and gently scramble until just set. Season with salt and pepper, then set aside to cool.
03 - Remove biscuits from can and roll each to 1/8-inch thickness on a clean surface.
04 - Place egg mixture on half of each biscuit round, leaving room at edges. Top with 1/4 cup cheese and crumbled bacon.
05 - Wet edges with water, fold into half-moons, and seal with fork.
06 - Spray air fryer basket with cooking spray. Place hand pies inside and spray tops. Air fry at 360°F for 5 minutes.
07 - Flip hand pies carefully and air fry another 4 minutes until golden and crisp.
08 - While pies cook, mix melted butter with onion powder and parsley in a small bowl.
09 - Brush cooked hand pies with seasoned butter and return to air fryer for 1 minute.
10 - Remove from air fryer and serve hot. Pairs well with ketchup, salsa, or hot sauce.
