01 - 1/2 pound ground breakfast sausage
02 - 6 large eggs, beaten
03 - 8 slices Colby-Jack cheese
04 - 4 tablespoons soft butter, divided
05 - 8 slices sourdough bread

# Steps to Cook:

01 - In a large non-stick skillet, cook and crumble the ground breakfast sausage over medium heat until no longer pink, about 5 to 7 minutes. Transfer to a paper towel-lined bowl and set aside.
02 - Wipe the skillet clean. Melt 2 tablespoons of butter over medium heat. Pour in the beaten eggs and cook slowly, stirring gently until just set. Remove from heat to avoid overcooking.
03 - Remove paper towel from under the sausage. Add scrambled eggs to the bowl and gently stir to combine without breaking the eggs.
04 - Butter one side of each bread slice. Place one slice butter-side down in the skillet. Layer with one slice of cheese, 1/2 cup sausage-egg mixture, another slice of cheese, and a second bread slice butter-side up.
05 - Cook each sandwich over medium heat for 3 to 4 minutes per side, pressing gently with a spatula, until both sides are golden brown and the cheese is fully melted.
06 - Transfer sandwiches to a cutting board. Let rest for one minute before slicing in half. Serve immediately while hot and melty.
