In a large non-stick skillet, cook and crumble the ground breakfast sausage over medium heat until no longer pink, about 5 to 7 minutes. Transfer to a paper towel-lined bowl and set aside.

Wipe the skillet clean. Melt 2 tablespoons of butter over medium heat. Pour in the beaten eggs and cook slowly, stirring gently until just set. Remove from heat to avoid overcooking.

Remove paper towel from under the sausage. Add scrambled eggs to the bowl and gently stir to combine without breaking the eggs.

Butter one side of each bread slice. Place one slice butter-side down in the skillet. Layer with one slice of cheese, 1/2 cup sausage-egg mixture, another slice of cheese, and a second bread slice butter-side up.

Cook each sandwich over medium heat for 3 to 4 minutes per side, pressing gently with a spatula, until both sides are golden brown and the cheese is fully melted.

Transfer sandwiches to a cutting board. Let rest for one minute before slicing in half. Serve immediately while hot and melty.
