Preheat oven to 350°F (180°C). Grease your baking pan or line with parchment paper.

In a bowl, mash the bananas with a fork. Stir in plant milk, syrup, vanilla, and apple cider vinegar. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Mix dry ingredients into the wet ingredients until just combined. Fold in any add-ins if using.

Pour the batter into the prepared pan and smooth the top. Add optional toppings. Bake for 25–30 minutes or until a toothpick comes out clean. Cool slightly, then slice into squares and serve.
