Baked Vegan Banana Pancakes (Printable Version)

# Everything You’ll Need:

01 - 2 ripe bananas
02 - 1 cup (250 ml) oat or almond milk
03 - 2 tbsp maple syrup or agave syrup
04 - 1 tsp vanilla extract
05 - 1½ cups (180 g) all-purpose or spelt flour
06 - 2 tsp baking powder
07 - ½ tsp baking soda
08 - 1 tsp apple cider vinegar
09 - 1 tsp cinnamon (optional)
10 - Pinch of salt
11 - Coconut oil or vegan butter for greasing the pan

12 - ¼ cup vegan chocolate chips
13 - Chopped nuts
14 - Berries
15 - Shredded coconut

# Steps to Cook:

01 - Preheat oven to 350°F (180°C). Grease your baking pan or line with parchment paper.
02 - In a bowl, mash the bananas with a fork. Stir in plant milk, syrup, vanilla, and apple cider vinegar. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Mix dry ingredients into the wet ingredients until just combined. Fold in any add-ins if using.
03 - Pour the batter into the prepared pan and smooth the top. Add optional toppings. Bake for 25–30 minutes or until a toothpick comes out clean. Cool slightly, then slice into squares and serve.
