Tender salmon baked with creamy spinach and melted mozzarella cheese for a nutritious dinner.

# Everything You’ll Need:

→ Salmon

01 - 2 salmon fillets (approximately 6 oz each)
02 - Salt, to taste
03 - Pepper, to taste

→ Spinach Mixture

04 - 10.5 oz frozen spinach, thawed and drained
05 - 1 medium onion, sliced
06 - 2 garlic cloves, minced
07 - 7 oz sour cream

→ Cheese Topping

08 - 5.3 oz shredded mozzarella cheese
09 - 1 tbsp olive oil

# Steps to Cook:

01 - Heat 1 tablespoon of olive oil in a skillet over medium heat until shimmering. Add sliced onions and sauté for 3 to 4 minutes until translucent, stirring frequently. Add minced garlic and cook for an additional 30 seconds until fragrant.
02 - Add thawed and drained spinach to the skillet. Cook for 2 to 3 minutes while stirring gently until heated through and excess moisture evaporates. Season with salt and pepper, remove from heat, then stir in sour cream until creamy and well combined.
03 - Preheat oven to 350°F. Season salmon fillets generously with salt and pepper. In a separate pan over medium heat, sear each side of the salmon for about 2 minutes to lock in moisture.
04 - Grease a baking dish and place seared salmon skin-side down. Spread the creamy spinach mixture evenly over the salmon, then top with shredded mozzarella cheese.
05 - Bake in the preheated oven for 15 to 20 minutes until salmon is opaque and flakes easily, and the cheese is golden and bubbly. Remove from oven and let rest for 2 minutes before serving.

# Extra Suggestions:

01 - For optimal moisture retention, slightly undercook the salmon during searing. Experiment with different cheese varieties for diverse flavor profiles.
