Peel, core, and dice Gala apples. In a saucepan over medium heat, melt butter and combine with brown sugar. Add diced apples, flour, and apple pie spice, stirring to combine. Cover and reduce heat to medium-low, cooking until apples soften, stirring occasionally. Remove from heat and cool.

Preheat oven to 350°F (175°C). Grease a donut pan thoroughly to prevent sticking.

In a large bowl, whisk together eggs, brown sugar, buttermilk, melted butter, and vanilla extract until smooth. Sift in flour, baking powder, baking soda, and apple pie spice, then whisk gently until combined.

Fold the cooled apple pie filling into the batter with a spatula until evenly distributed.

Transfer batter to a piping bag (using a pint glass for ease). Cut the tip off and pipe the batter into the greased donut cups, filling nearly to the top.

Bake in the preheated oven for 11 to 12 minutes until lightly golden and a toothpick inserted comes out clean. Let cool on a wire rack.

Melt butter in a small bowl. In a separate shallow dish, combine granulated sugar and cinnamon. Brush the top of each cooled donut with melted butter, then dip into the cinnamon sugar mixture to coat. Repeat for all donuts.
