Combine diced apples, brown sugar, lemon juice, ground cinnamon, ground nutmeg, and cornstarch in a small saucepan. Cook over medium heat for 5 to 6 minutes until apples soften and the mixture thickens. Remove from heat and cool completely.

Unroll pie crust sheets. Using a 4 to 5 inch round cutter, cut out 8 equal rounds. Re-roll scraps if necessary to achieve full quantity.

Place about 1 tablespoon of cooled apple filling in the center of 4 pastry rounds. Cover each with another round and press edges firmly with a fork to seal.

Whisk beaten egg with milk. Brush tops of sealed hand pies with egg wash and sprinkle with granulated sugar.

Preheat air fryer to 350°F for 3 minutes before cooking.

Place hand pies in a single layer in the air fryer basket. Cook for 10 to 12 minutes or until pastry is golden and crisp. Cook in batches if necessary.

Allow hand pies to cool slightly. Optionally dust with powdered sugar or drizzle with glaze before serving.
