Preheat the oven to 350°F and line a baking sheet with parchment paper.

In a mixing bowl, cream together the peanut butter, softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a smooth dough forms.

Scoop about 2 tablespoons of dough, flatten into discs, and arrange half on the prepared baking sheet. Place approximately 1 teaspoon of jelly in the center of each disc.

Top each jelly-filled disc with another dough disc and press the edges firmly to seal. Bake for 12 to 15 minutes or until the edges turn golden brown.

Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
