01 - 1 cup creamy peanut butter
02 - 1/2 cup unsalted butter, softened
03 - 1/2 cup granulated sugar
04 - 1/2 cup packed brown sugar
05 - 1 large egg
06 - 1 teaspoon vanilla extract
07 - 1 1/2 cups all-purpose flour
08 - 1/2 teaspoon baking powder
09 - 1/2 teaspoon baking soda
10 - 1/4 teaspoon salt

→ Filling

11 - 1/2 cup jelly (grape or strawberry)

# Steps to Cook:

01 - Preheat the oven to 350°F and line a baking sheet with parchment paper.
02 - In a mixing bowl, cream together the peanut butter, softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
03 - Add the egg and vanilla extract to the creamed mixture and mix until thoroughly combined.
04 - In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a smooth dough forms.
05 - Scoop about 2 tablespoons of dough, flatten into discs, and arrange half on the prepared baking sheet. Place approximately 1 teaspoon of jelly in the center of each disc.
06 - Top each jelly-filled disc with another dough disc and press the edges firmly to seal. Bake for 12 to 15 minutes or until the edges turn golden brown.
07 - Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

# Extra Suggestions:

01 - Use chilled dough if it becomes too soft to handle when shaping.
