01 - 1 pound thinly sliced ribeye or flank steak
02 - 1 tablespoon olive oil or unsalted butter
03 - 1 green bell pepper, sliced
04 - 1 small onion, thinly sliced
05 - 1 cup shredded mozzarella cheese
06 - 1/2 cup provolone cheese, shredded or chopped
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon smoked paprika (optional)
09 - Salt and freshly ground black pepper, to taste

10 - 1 1/2 cups shredded mozzarella cheese
11 - 2 tablespoons cream cheese
12 - 3/4 cup almond flour
13 - 1 large egg
14 - 1/2 teaspoon baking powder

# Steps to Cook:

01 - Heat olive oil or butter in a skillet over medium heat. Add sliced onions and green bell pepper; sauté until soft, about 5 minutes. Add thinly sliced beef, garlic powder, smoked paprika (if using), salt, and pepper. Cook for 4 to 5 minutes until beef is browned and cooked through. Remove from heat and stir in provolone cheese. Let cool slightly.
02 - In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave for an additional 30 seconds until melted and thoroughly combined. Add almond flour, baking powder, and egg to the cheese mixture. Mix until a smooth dough forms, using hands if necessary. Roll dough between two sheets of parchment paper into a 1/4-inch thick rectangle.
03 - Spread the cooled beef filling evenly over the rolled-out dough. Sprinkle shredded mozzarella cheese on top. Carefully roll the dough into a log using the parchment paper to assist. Slice the log into 6 to 8 individual rolls. Place rolls on a parchment-lined baking sheet.
04 - Preheat oven to 375°F (190°C). Bake rolls for 18 to 22 minutes until golden brown and cooked through. Allow to cool for 5 minutes before serving.
