# Steps to Cook:

01 - Rinse the rice thoroughly under cold water. In a saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed. Remove from heat and keep covered for 5 minutes before fluffing with a fork.
02 - In a medium bowl, toss the chicken with Cajun seasoning, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 7 minutes per side until golden and cooked through. Transfer to a plate and rest for 2 minutes, then slice.
03 - Heat 1 tablespoon olive oil in the same skillet over medium heat. Add diced bell peppers and red onion, sautéing for 4 to 5 minutes until softened. Stir in corn and black beans and cook for an additional 2 minutes until heated through. Season with salt and pepper to taste.
04 - Divide the cooked rice evenly among 4 bowls. Layer sautéed vegetables and beans over the rice, then top with sliced chicken. Garnish with avocado slices, chopped cilantro, and lime wedges as desired.

# Extra Suggestions:

01 - Adjust the amount of Cajun seasoning to suit preferred spice levels.
